Coconut & Mango Fools

Enjoy this delicious layered dessert – it’s a taste of the tropics that’s ready in 10 minutes.

  • 250 g Greek-style coconut yogurt
  • 150 g fresh mango flesh, diced
  • 4  Nature Valley™ Crunchy Oats & Honey Snack Bars, broken into pieces    
  • 1 tablespoon unsweetened coconut flakes


  1. 1 Divide half the yogurt between 2 individual serving glasses. Top each with half the diced mango and half the granola bar pieces.
  2. 2 Repeat the layers once more, then top with the coconut flakes. Serve immediately or chill for 30 minutes before serving.

    To save time, look for prepared fresh mango in the supermarket. Alternatively, peel 1 large ripe mango and dice the flesh, discarding the stone.
    To give a flavour boost, why not lightly toast the coconut flakes. Heat in dry frying pan over medium-low heat for a few minutes, stirring frequently until lightly browned at the edges.
