Granola Fruit Slice

This quick and delicious, fruity granola ‘pizza’ is covered in fresh and flavourful summer berries.

Ingredient List

  • Small check mark in a circle 5 Nature Valley™ Crunchy Oats & Honey Granola Bars
  • Small check mark in a circle 50 g light brown sugar
  • Small check mark in a circle 50 g unsalted butter, melted
For the topping
  • Small check mark in a circle 225 g full-fat soft cheese, at room temperature
  • Small check mark in a circle 50 g icing sugar
  • Small check mark in a circle 1 teaspoon vanilla essence
  • Small check mark in a circle 300 g strawberries, hulled and sliced
  • Small check mark in a circle 100 g blueberries

Preparation

  1. Preheat the oven to 180°C (160°C for fan assisted ovens)/Gas Mark 4. Line a large baking sheet with baking paper. Place the granola bars in a food processor and pulse until finely crushed. Add in the sugar and butter and pulse until combined, then spoon onto the baking sheet and press the mixture into a 23cm circle, forming a slight rim around the outer edge. Cook in the oven for 10-12 minutes until set and crisp. Cool on a wire rack for about 30 minutes.
  2. Place the soft cheese, sugar and vanilla in a medium bowl and beat with an electric whisk until smooth. Spread the mixture over the cooled crust leaving a 1cm edge free. Arrange the berries over the cream cheese, as you like, then chill for 1 hour before serving.

Tips

  • This is best eaten the same day, but you can cover and store any remaining ‘pizza’ in the fridge for eating the next day.
  • Use any combination of fresh fruits to top the ‘pizza’ with.
